Sour rye soup on smoked goose, sour cream, breaded yolk

Confit goose thigh, rosemary, plum dumplings, garlic pumpkin, Bordeaux sauce with chocolate.
DESSERT
Tart with roasted pear flavored with rosemary and thyme, white chocolate mousse, cornelian cherry sauce.
A glass of Saint Martin's 2025 wine
Saint Martin's wine from the pinot noir grape, i.e., blanc de noir! from Turnau Vineyard was made from grapes harvested this September and fits the increasingly popular trend of white wines made from noble Burgundy grape variety. Saint Martin’s White reflects the freshness of young wine. As tradition says, it pairs best with goose, but it is also a good companion to roast stuffed chicken. The wine is also perfect for drinking on its own.
